When you have to cook two or three times a day it is easy to get in a rut isn’t yet?
Luckily, there is such a thing as Pinterest to always provide new inspiration when even my cookbooks seem somewhat used up.
Recently I shared about how much I love having time to bake, and cook again. I wanted to take this sentiment a bit further, and let you in on the recipes I love the most right now. Try a few of them out, and let me know what you think!
10 Tried and True Main Dish Recipes That Will Please Everyone at Your Table
I could eat Mexican food every day of the week, and never get bored. I love cooking enchiladas, burrito bowls, and this Mexican Lasagna which is my new favorite!
My all time favorite thing to make for supper is Starving Student Chicken, although it never tastes quite as good as when my Mom makes it.
There is nothing like a bowl of soup when you are a little snuffly. This Spinach, Garlic and Tortellina Soup has quickly become one of my favorites. If you get the fresh, cheese-stuffed tortellini–all the better!
Creamy Chicken and Asparagus Pasta is to die for {and it has bacon in it–bonus!}.
I remember as a kid that one day a year when we would pull out a box of Hamburger Helper, and eat it for lunch. There is something so comforting and rich about those cheap boxes of noodles. This Cheeseburger Casserole reminded me of Hamburger Helper–only it is homemade, and slightly healthier.
Last winter was the winter of Taco Soup. I made it for the wrestlers. I made it for my family. I made it for myself. There is nothing like a soup you can cover with layers of cheese, sour cream, salsa, hot sauce, and green onions. And then eat with tortillas chips. Yum.
Warrior Man and I scored two George Foreman’s at a garage sale last fall, and since then have made a fair amount of Turkey Burgers. If you make them ahead of time, and freeze them for quick meals they are fast, healthy and delicious. And did I mention fast?
While my meal of choice is Mexican, Warrior Man is partial to Chinese food so we eat a fair amount of stirfrys. This Garlic Ginger Shrimp Stir Fry combines all of my favorite things. Yum.
Lasagna is so easy to freeze, and pull out for a quick meal. One of my favorite lasagna recipes are these Lasagna Roll-ups. They never disappoint.
Don’t underestimate the power of curry! Warrior Man cooked up some curry salmon the other day which was to die for. Although he did not follow a recipe, I imagine he cooked it kind of like this Coconut-Curry Salmon recipe. Mmmm mmm good.
