Peanut Butter Granola Bars (Gluten-free!)

Serves: 10-12 bars
  • ⅔ c Coconut Oil
  • 1 c Peanut Butter
  • 1 T Honey
  • 3 c Rolled Oats
  • ⅓ c Flaxseed, chia seeds, coconut flakes or mini chocolate chips (optional)
  1. Melt together coconut oil, peanut butter, and honey in a pan on the stove on medium heat. Stir frequently. When melted, remove from heat.
  2. Pour the oil/peanut butter/honey mixture over the oats, and stir to combine.
  3. Mix in any additional ingredients you desire.
  4. Spread in a 9x13 pan, and place in the fridge until solid.
  5. Cut into bars, and store in the fridge.
