Spinach Lasagna Roll-ups

Ingredients
  • 1 box whole Lasagna Noodles
  • Sauce:
  • 2½ Tablespoons Olive Oil
  • 2 whole Onions, Diced
  • 3 cloves Garlic, Minced
  • 2 pounds Ground Turkey
  • 28 ounces, Canned Crushed Tomatoes
  • 8 ounces, Tomato Paste
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 3 Tablespoons Minced Fresh Parsley
  • Filling
  • 5 cups Spinach, cooked and drained.
  • 28 ounces, Cottage Cheese
  • 2 Eggs
  • 1 cup Grated Parmesan Cheese
  • ½ teaspoon Salt
  • ½ teaspoon Pepper
  • 1 pound Mozzarella, Grated
Instructions
  1. Boil lasagna noodles until done. Drain and lay flat on a cookie sheet.
  2. On a skillet, heat olive oil over medium-high heat. Add onions and garlic and cook for a couple of minutes. Add the turkey, and cook it until totally browned. Drain fat, then add crushed tomatoes, tomato paste, salt, pepper, and parsely. Reduce the heat and simmer for 30 minutes.
  3. Make the filling by combining cottage cheese, eggs, Parmesan, salt, pepper, parsley, and the cooked spinach.
  4. To assemble, spoon a little sauce into the bottom of a 9 x 13 inch pan. Spread 2-3 tablespoons cottage cheese filling on each noodle, then roll them up. Top with remaining sauce, plenty of grated mozzarella, and grated Parmesan.
  5. If baking immediately, bake at 375 for 20 minutes or until hot and bubbly.
  6. If baking from a frozen state, bake, covered in foil, at 350 for 30 minutes, then remove the foil and continue baking for 15 minutes, or until lasagna is done.
